Cherry, Lime Sweet-Tart Popsicles
You know those food items that everyone in your house loves, that are hard to keep in stock? Well, popsicles are at the top of that list at our house. Especially during our long (sometimes never ending), hot, Arizona summers. When it comes to our list of favorite family foods, I love creating recipes that are both delicious and healthy. With that in mind, I set out on a mission this summer to create a variety of delicious, nutritious and refreshing popsicle recipes.
First in line, these Cherry Lime Sweet-Tart Popsicles. After recreating this recipe multiple times, I nailed the perfect combination of both sweet and tart. Our whole family is obsessed with them! They are definitely going to be a staple at our house this summer. They taste amazing and are also loaded with lots of amazing nutrients. A win win situation!
The Benefits of Cherries
This recipes calls for 2 cups cherries. I used frozen dark sweet cherries, but you can use fresh cherries as well (just be sure to remove the pits)!
Cherries are a great source of polyphenols and vitamin C. These nutrients help prevent many chronic diseases by acting as anti-oxidants and reducing inflammation. Research has also shown that eating cherries may help reduce exercise-induced muscle soreness, lower blood pressure and cholesterol, manage arthritis symptoms, and improve sleep. Pretty amazing, right?!
We bought a cheap plastic popsicle mold just a couple months ago, and already one stick handle was destroyed in the garbage disposal, one was ran over by a car, and one was chewed up by our dog. It’s so hard keeping track of those dang things at our house!
Since that mold is mostly unusable, I bought this popsicle mold off of Amazon, and so far I am loving it.
- You can make 12 popsicles (32 ounces) at once
- There are only two parts. This makes cleaning and storing it much easier than the ones with individual stick handles
- The popsicles come out very easily
- You can use regular popsicle sticks. No need to worry about losing the custom stick handles other molds come with
- It comes with a small pack of popsicle sticks, but you’ll have to buy more whenever they run out
- It bends easily when you are carrying it, and can spill the liquid out (I speak from experience)
Making the Cherry Lime Sweet-Tart Popsicles
These cherry, lime sweet-tart popsicles are literally the easiest thing to make. All you have to do is dump all of the ingredients in a blender and blend. Easy peasy limey squeezy.
This recipe makes roughly 32 ounces which is the perfect amount to fit the popsicle mold I bought. If your popsicle mold is smaller, you can cut this recipe down, or just drink the leftovers. Yum!
When pouring the blended liquid into your popsicle mold, don’t fill the pockets all the way to the top. This allows room for the natural expansion that happens when you freeze them. Fill them till they’re just slightly below the top.
After pouring your blended popsicle mix into your mold, place the lid and sticks into it, then put it in your freezer. I recommend freezing it overnight, or for about 8 hours.
If you’re like us though, and too excited and impatient to wait that long, just be aware that the popsicle sticks might pull right out of the popsicle. Ha ha! In that case, just plop your popsicle it into a bowl and eat it with a spoon.
