Nutrient Loaded Edamame Dip
This super easy edamame dip is a favorite at our house! Not only is it delicious, but it’s also packed with several awesome nutrients. With the perfect combination of fiber, protein and healthy fats, this dip will satisfy your hunger and keep full. The best part, it can whipped it together in 10 minutes or less!
What are Edamame?
Edamame (also known as soybeans or mukimame) are immature green soybeans that grow in a pod. Unlike peas, however, their pods are very tough and can’t be eaten. You can find them in the freezer section of your grocery store, sold in their pods, or already shelled. They are a great source of plant based protein, fiber, protein, folate, vitamin C, calcium and iron. Research has also shows that eating soy based foods, like edamame, reduces the risk of developing breast cancer, helps lower cholesterol levels, and decreases menopause symptoms. Pretty cool, right?!
How to Make the Dip
Start by steaming your shelled edamame. I find it easiest to do this in the microwave. First, pour the frozen edamame into a microwave safe dish. Then add a little water to bottom of the dish. Cover the dish with a microwave safe lid or plate then cook them for five minutes. When they are done, carefully drain and discard the excess water from the edamame.

Next, add the cooked edamame, lime juice, cilantro, plain yogurt, salt, pepper and garlic to a food processor, and blend, stopping periodically to scrape the sides. When the mixture is blended, turn the food processor back on and slowly drizzle the olive oil into it. With the food processor still running, drizzle the water into the dip until the desired consistency is reached.

Ways to Enjoy It
Once you have finished blending your dip, you can start eating it right away. Some of our favorite ways to enjoy it include:
- as a dip for whole grain crackers or tortilla chips (topped with a little hot sauce)
- layered on a deli meat sandwich
- spread on a piece of toast then topped with a cut tomato, black pepper and balsamic glaze
- as a dip for a veggie tray
How to Store it
You can store this in an airtight container in your fridge for up to four days. It can also be stored in your freezer it for up to 4 months. After freezing it, let it defrost in your fridge for one day then give it a good stir before eating it. Enjoy!!
